What to know
Grit numbers are not comparable across standards. A Japanese #1000 is roughly a US 400–600. Work the ladder: a #220–400 to set a bevel, #1000 to sharpen, #6000 and up to polish. Every waterstone dishes as it works, and a dished stone rounds the bevel it is supposed to be flattening, so a lapping plate is not optional equipment.
